Manuka Banana Cake
Ingredients:
- 3 ripe bananas (mashed)
- 1/2 cup Gather By Manuka honey (MGO100+ or MGO250+)
- 1/3 cup coconut oil (melted)
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour (or all-purpose flour)
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/4 cup chopped walnuts (optional)
Instructions:
- Set your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper
- In a large bowl, whisk together the mashed bananas, Manuka honey, melted coconut oil, eggs, and vanilla extract until well combined.
- In a separate bowl, mix the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
- Fold in the chopped walnuts if desired.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
