Manuka Honey and Avocado Superfood Salad
This raw vegetarian salad is perfect as a light meal or a side dish, providing a delicious blend of flavours and health benefits, with the unique touch of Gather By Manuka Honey. Enjoy!
Ingredients:
- 1 ripe avocado, diced
- 1 cup mixed leafy greens of your choice (eg.spinach, rocket, kale)
- 1/4 cup raw pine nuts or walnuts, roughly chopped
- 1/4 cup pomegranate seeds or strawberries (optional)
- 1 small cucumber, sliced
- 1/4 cup crumbled feta cheese (optional)
- 1 tbsp Gather By Manuka Honey
- 1 tbsp extra virgin olive oil
- 1tsp - 1 tbsp lemon juice (adjust to taste)
- 1 tsp Dijon mustard
- 1 tbsp spanish onion, finely chopped
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together the Gather By Manuka Honey, olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
- In a large salad bowl, combine the mixed leafy greens, diced avocado, cucumber slices, spanish onion and pomegranate seeds or strawberries.
- Add the pine nuts or chopped walnuts and crumbled feta cheese over the salad.
- Pour the Manuka honey dressing over the salad and toss gently to combine all the ingredients.
- Serve immediately and enjoy a fresh, nutrient-packed meal!
