Raw Manuka Honey and Berry Bliss Bars

Enjoy these delicious and easy to make healthy snacks!

Ingredients:

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup pitted dates
  • 2 tbsp Gather By Manuka honey 
  • 1/2 cup dried cranberries
  • 1/2 cup dried blueberries
  • 1/4 cup chia seeds
  • 1/4 cup raw cacao nibs
  • 1 tsp vanilla extract
  • A pinch of sea salt

Instructions:

  1. Prepare the Nuts:
    • In a food processor, pulse the almonds and cashews until they are coarsely chopped.
  2. Blend the Dates:
    • Add the pitted dates to the processor and blend until the mixture starts to stick together.
  3. Mix the Ingredients:
    • Add the Manuka honey, dried cranberries, dried blueberries, chia seeds, raw cacao nibs, vanilla extract, and sea salt. Pulse until all ingredients are well combined and form a sticky dough.
  4. Shape the Bars:
    • Transfer the mixture onto a parchment-lined baking sheet. Press the mixture firmly into a flat, even layer (about 1.5cm).
  5. Chill and Cut:
    • Refrigerate for at least 2 hours until firm. Once set, cut into bars or squares.
  6. Serve:
    • Enjoy immediately or store in an airtight container in the fridge
