Manuka Banana Cake

Ingredients:

  • 3 ripe bananas (mashed)
  • 1/2 cup Gather By Manuka honey (MGO100+ or  MGO250+)
  • 1/3 cup coconut oil (melted)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour (or all-purpose flour)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Set your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper
  2. In a large bowl, whisk together the mashed bananas, Manuka honey, melted coconut oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, mix the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  5. Fold in the chopped walnuts if desired.
  6. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
