Energy Balls with Manuka Honey
These energy balls are perfect as a quick snack, a pre/post-workout boost, or a healthy dessert. Enjoy the natural sweetness and health benefits of Manuka honey in every bite!
Ingredients:
- 1 cup raw almonds
- 1 cup raw cashews
- 1 cup pitted dates
- 2 tbsp Gather By Manuka Honey
- 1/2 cup dried cranberries
- 1/2 cup dried blueberries
- 1/4 cup chia seeds
- 1/4 cup raw cacao nibs
- 1 tsp vanilla extract
- A pinch of sea salt
Instructions:
- Blend Nuts and Dates:In a food processor, pulse the almonds and cashews until they are finely chopped.
- Add the pitted dates and blend until the mixture starts to stick together.
- Add the Manuka honey, dried cranberries, dried blueberries, chia seeds, raw cacao nibs, vanilla extract, and sea salt.
- Pulse until all ingredients are well combined and form a sticky dough.
- Roll the mixture into small balls, about 2-3cm in diameter.
- Place the energy balls on a parchment-lined tray and refrigerate for at least 1 hour until firm.
- Enjoy immediately or store in an airtight container in the fridge for up to a week.
